Made & used at the Food Research Section, Applied Biology of the National Research Council of Canada (NRC). Possible connections to D.A. Fletcher, identified as a research specialist with the Poultry Division of the Department of Agriculture in Ottawa. Fletcher developed the Fletcher colour scale with NRC paint specialists according to Earle Snyder, "Eggs: The Production, Identification and Retention of Quality in Eggs." A device used to measure the freshness of an egg by measuring the height of the yolk of a broken egg; the greater the yolk height, the fresher the egg. - Technique

An example of a simple egg freshness tester using mechanical principles. The device measured the Haugh Unit score. See Snyder, "Eggs: The Production, Identification and Retention of Quality in Eggs." Ottawa: Department of Agriculture, 1961, 33-39 for images and discussion. This unit appears to be the stand and may be missing the micrometer, which actually measured the height of the yolk.
