Copper is heat responsive which explains why this type of pan was favourite to do jams and jellies. The shape of the pan also plays a role in facilitating successful jam making. With time it was discovered that copper and brass reacted with high-acidic food, which produces verdigris a poisonous substance. Therefore domestic appliances made of brass and copper had to be used with caution, very well maintained and re-tinned when necessary. Pans made of other material were offered on the market. - Area Notes
